Star Fruit Pico w/ Cilantro Lime Rice.

The next item in this Spring Produce Guide is very unique. Unique in shape that is! This 5-point fruit is know too be grown in Southeast Asia and Indonesia. Luckily this gem is grown all over the world year round in areas with tropical weather. The taste of a star fruit will depend on it’s time of ripeness. If its more on the dark green it will be more tart and sharp in flavor. Allowing it to ripen more will allow its flavor to become a little more sweet.

When I decided to do Star Fruit, immediately something was telling me to do a tropical mango salsa, and guess what, I definitely went with it cause, “Why not”? I have videos on Tik Tok of me prepping, making, and building this recipe. It was really fun and really delicious.

-Hothouse Tomatoes

-Red Onion

-Poblano Pepper

-Cilantro

-Yellow Mango

-Star Fruit

-Honey

-Salt

-Lime Juice

1. Medium dice hothouse tomatoes and yellow mango.

2. Small dice red onion, poblano pepper, and star fruit.

3. Chop cilantro; you can use the stems as well.

4. In a mixing bowl, add tomato, mango, red onion, cilantro, star fruit, peppers into a bowl. Based on your preference, add more of whatever you like and give it a mix.

5. In the same bowl your going to add salt and lime juice. You can swap to lemon juice if you don’t like lime.

6. Drizzle honey in. Depending on what you’re going for “sweeter/fruity” pico, add more honey. Sticking to a more traditional, you’d want to use little to no honey.

7. Mix and Taste. Adjust the recipe to your liking by adding more of what’s lacking.

8. Serve with protein and rice. (Fish, Chicken, & Shrimp)
