Stuffed Delicata Squash

Embrace the fall weather with these fun fall flavors. Healthy and filled with color, this dish is sure to make it on your “Make Again List”. This dish can be remixed in more ways than one. Change the protein or veggies the possibilities are endless.

Ingredients

– Delicata Squash

-Italian Sausage

-Sweet Potatoes

-Red Bell Pepper

-Lacinato Kale (Dinosaur Kale)

-Garlic (Minced)

-Mozzarella Cheese (Shredded)

-Marinara Sauce (optional)

-Olive Oil

-Salt

-Pepper

-Italian Seasoning

-Red Pepper Flakes (Optional)

Directions

  1. Place oven on 375 degrees fareneheit
  2. Take your sweet potaoes and peel them. Then cut them into equal medium sized cubes. The sizes are important because we want everything to cook evenly. Place potatoes in a pot of boiling water and cook until fork tender. Strain and set aside.
  3. Take the delicata squash and cut off both ends. Take your knife and cut the sqush long ways (up and down), allowing you to have two boats. Take a spoon and scrape out the insides. Repeat this process until all of your squash is cut.
  4. Pour olive oil onto squash, then begin to brush it, thus coating the entire thing. Place each boat on a sheet pan, skin side down. Season the inside with Salt, Pepper, and italian seasoning. Feel free to add more; ie red pepper flakes. Roast in the oven for about 35-40 minutes until just about 5-10 minutes done. Cook time will vary depending on squash size and oven types.
  5. Small dice red bell pepper and set aisde.
  6. Take bunch kale and remove the stem. Slice the kale into mouth sized pieces. The kale will shrink when we begin to cook it, so use your best judgement. Rinse and Set aside.
  7. In a deep pan add olive oil and evenly coat the bottom. Add in the Italian sausage and chop into pieces. Cook and without removing add in red bell peppers. Cook the peppers until they are soft. Add in sweet potatoes, kale, and seasoning. Stir everything around until evenly incorporated.
  8. Cut off heat and prepare the area for boat stuffing.
  9. In front of you, you’ll need a spoon, your roasted delicata squash, Italian sausage mix, & mozzarella cheese. Add marinara if you’re feeling saucy.
  10. Assemble the boat with the Italian sausage mix and top with as much mozzarella cheese as you’d like. Fill and top all boats and place back into the oven until cheese is golden brown.
  11. Remove squash from the oven and you’re ready to eat. You can eat this as is or along side your favorite marinara sauce.
