Seafood Mac N’ Cheese

Cooking With Ko has taken everyone’s childhood favorite and made it an adult favorite. No, we didn’t add bacon or chicken to this dish simply because we don’t support that here. We added something a little more crazy, yet flavorful. That’s right, we added seafood, shrimp & crab to be exact. That doesn’t mean you can’t add any others; lobster, crawfish, etc. Keep reading to discover how I took this simple Mac n cheese to the next level.

Ingredients

  • Velveeta Cheese (Mines from scratch)
  • Cajun Seasoning (My secret blend)
  • Cavatappi (spiral) Noodles (Any kind of pasta)
  • Green Onion or Parsley (Garnish)
  • Shrimp (Large & Deveined) (Chopped or Whole)
  • Crab Meat (Fresh Preferred, Legs or Lump Crab Meat)
  • Milk
  • Oil (Noodles & Pan)
  • Salt (Kosher)
  • Black Pepper

Directions

1. Place a pot of water on medium and bring to a boil.

2. Add 2 tablespoons of oil (prevent sticking)

3. Add 1 tablespoon of salt (gives noodles flavor)

4. Peel and devein shrimp if not already done. Set aside.

5. Remove crab meat from legs OR drain liquid from lump crab meat. Set aside.

6. By now your water should be boiling, add in your pasta of choice. Stir periodically to prevent sticking.

7. Place another medium pot on medium.

8. Add roughly 2.5 cups of milk and let simmer.

9. Cut Velveeta cheese in approximately medium sized cubes and add to the simmering milk.

10. Periodically stir until cheese is fully melted. Gradually add more milk until desired thickness

11. Add desired amount of Cajun seasoning /spices and place on low to prevent the cheese from solidifying.

12. Next, heat a large cast iron pan (optional), add 1.5 tablespoons of oil, and add shrimp. Cook until shrimp is almost done and add crab meat.

13. Season to taste. Set aside.

14. The pasta should be about done, if not continue to cook. If the pasta is done, strain the water. In the mean time, slice green onions and prepare for assembly.

Assembly

Option 1:

Add noodles and seafood mixture into pot and give it one big stir.

Add green onions in as well.

Option 2 (Preferred):

Grab a bowl or plate.

Add pasta.

Ladle desired amount of cheese sauce.

Scoop desired amount of seafood mixture.

Garnish with green onions.
